Osso Bucco, or shank cross cut, is often overlooked, but is quite delicious. This cut comes from the foreshank—a relatively worked muscle on the aniimal. What most don’t realize is that even the toughest muscles can be enjoyable to consume. Osso Bucco is best braised like short ribs or oxtail. The slower it is cooked, the more that small pocket of bone marrow in the center can render into the meat. This is what gives the shank incomparable flavor.
