Leg of lamb is arguable the best roast on the animal. The leg is lean and tender with a much more ideal meat to bone ratio than that of a sirloin roast. The leg takes on any marinade or spice rub without losing too much of its natural lamb flavor. Roast the Leg of Lamb at a low, slow heat. Ideally, this cut of meat has a bit of pink left in it as it is being served.
