The Boston Butt actually comes from the shoulder, despite what it might sound like. The butt is sometimes considered to be more prized than even the tenderloin because of its versatility and incomparable flavor. The scapula, or paddle bone, is the main bone that runs through the entire roast. If cooked properly, the meat will fall right off of it. Pork shoulder is unbelievable tender and will pull apart without even using a knife. Whether it’s for pulled pork sandwiches or a just pot roast, give the Boston Butt ample amount of time to braise. You will not be disappointed with the results!
