Our Beef Jerky recipe has recently been updated by one of our undergraduate workers and a number of meat lab faculty members. A peculiar combination of apple-cider vinegar, soy sauce, and a BBQ spice blend makes for an amazingly delicious jerky ! We begin by thinly slicing beef rounds and marinating them over night. The following day, the jerky is layed out and slowly dried in our smokehouse. With very close monitering, we measure the jerky’s water activity so that it can be safely kept at room temperature for extended periods of time. This product comes in 6 oz. packages and is great for an on-the-go snack.
