Breakfast sausage is an necessity to any balanced breakfast. At Bucky’s, we use a spice blend provided by Excalibur spices to season the ground pork before it is co-extruded into an alginate casing. What is “co-extrusion” you ask? Our co-ex system is a state-of-the-art piece of processing equipment donated to the Meat Lab by Handtmann inc. based in Germany. Using this system allows us to stay on top of manufacturing needs in the industry and experiment with new sausage making techniques on our own. UW is lucky to have the only meat lab in the United States with this cutting-edge technology.
