Of all the processed products we make, the Mushroom & Swiss Smoked Sausage is one of our most popular. We take a standard smoked sausage seasoning from Excalibur spices and add swiss cheese made by our neighbors at the Babcock Dairy Plant along with mushroom bits. After being stuffed into collagen casings, we cook the sausages in the smokehouse so they are ready-to-eat for our customers. As soon as they are re-heated, these smoked sausages turn into a delicious, warm, cheesy delight.
