Beef Summer Sausage is a year-round treat here in Wisconsin. We start with mixing a unique blend of spices into beef, adding starter culture, and allowing the meat to ferment over night. When the sausage is finally smoked, the starter culture reacts with the sugars to create a mildly tangy, sweet flavor. Summer sausage is one of our most popular products. It is often included in the holiday gift baskets produced by the Babcock Dairy Plant each year in December.
